歷史沿革

Vitorchiano sisters in procession嚴規熙篤隱修院的聖若瑟聖母院位於義大利中部拉齊奧的托西亞地區西米尼山腳下的維托爾奇諾。1875年,一群來自法國里昂Vaise聖母院的熙篤隱修會修女們開始在義大利建立一個新的會院。他們一開始在杜林附近的聖維托落腳,在1898年時暫時遷移到格羅塔費拉塔,當地的天主教團體將他們的安養院提供給這個年輕的修會。然而修女們一直希望能夠永久地在此安定下來,於是在1954年時她們決定在維托爾奇諾置產,開始建造隱修院,並於1957年六月時建造完成,修女們終於可以永遠定居於此。多年來,修女們一直在這片由典型火山岩”peperino”組成的土地上耕耘,努力工作著。

現任的隱修院院長是Rosaria Spreafico修女,目前他們有超過70位修女,平均年齡為53歲,最年輕的是25歲,最年長的則為93歲。

維托爾奇諾隱修院的修女們以她們的雙手自力更生,她們有各式各樣的手作產品如葡萄酒、果醬、橄欖油,此外她們也出版宗教相關的刊物、卡片及日曆等等。

酒莊歷史

1963年修女們開始在這個地方種植包括Trebbiano、Malvasia、Verdicchio和Grechetto等品種的葡萄,且所有的栽種都沒有使用任何合成化學物。

維托爾奇諾修道院的酒都叫做Coenobium——拉丁文中就是修道院的意思。

目前,葡萄園占地三公頃(7.4公畝),且這些平均超過三十年的葡萄藤都是以人工修剪的方式來養護。

修道院從1993年起就遵循義大利當地的有機協會Suolo e Salute的有機耕種法,定期割除雜草以便化做有機肥。由於一切天然沒有化學添加,修女們釀造的葡萄酒特別容易消化,這也意味著相較於其他葡萄酒,稍微喝多了維托爾奇諾修道院的酒也無傷身體,不會有眼睛紅、頭痛火燒心的宿醉症狀。在十月的前十天裡,修女們會親自採收所有的葡萄。新鮮採摘的葡萄被帶到釀酒廠,釀製過程只用天然酵母,絕無添加任何人工發酵劑。

這款罕見的拉齊奧白酒年產量大約是17,000瓶,是由三款原生葡萄品種調和而成:45% Trebbiano、35% Malvasia、 20% Verdicchio。這些葡萄都是在維托爾奇諾修道院修女的園區內種植,是款相當有個性的白酒,之所以如此乃因其成長所在地是肥沃的火山岩土壤。

顏色:稻草金黃的顏色

香氣:野生藥草、花朵、檸檬及些許熱帶水果如鳳梨、香蕉、水蜜桃及杏桃的香氣,且隱約帶有一絲礦物味。

口感:些微的甜味伴隨愉悅溫和的酸味,成熟的蘋果、梨子、檸檬和礦物的氣息。是一款非常平易近人,滑順可口、能夠輕易享受的酒款。

建議溫度:12-15度

建議搭配:卡布里沙拉、義大利培根蛋麵、羅馬式麵疙瘩、白醬義大利麵、烤雞、海鮮蚌殼類、野兔或螺肉。

維托爾奇諾修女手工有機修道院橘色白葡萄酒 2015

Ruscum也是使用三種原生種葡萄釀造:45% Trebbiano、35% Malvasia、20% Verdicchio。特別的在這個製程中,果皮會留著一起發酵15天,以獲取果實中更多的風味、顏色及質地。雖與紅酒相似,但整體呈現的卻是深金黃的顏色及貫穿整個酒體的礦物質口感加上些許如同茴香、鼠尾草、奧勒岡葉及野花的香草氣息。這款優質的酒款年產量只有4000瓶。

由於尊重葡萄酒本身的自然個性,不另作強制穩定過程,因此酒精百分比會逐年變化。

顏色:深金如古銅的色調

香氣:藥草(鼠尾草、奧勒岡葉、薄荷等等)、野花、木質氣味,成熟水果如蘋果、梨子、萊姆的香氣,礦物質。

口感:品飲此酒款時如同味覺大爆發,新鮮多元的口味讓你忍不住一嘗再嘗。討喜迷人的酸氣帶點單寧(因為15天的帶皮發酵),可以同時品嘗到葡萄柚、新鮮橙皮、香檸皮屑、柑橘及溫順的蜂蜜味。滑順多汁,越喝越順的一支完美平衡的酒款!

建議搭配:燉雞料理、新鮮的起司、義式茹絲緹卡派、披薩、鵪鶉、魚類料理、焗烤茄子。

Monastery History

The Trappist Monastery of Our Lady of St. Joseph lies in Vitorchiano at the foot of the Cimini Mountains, in the region of Tuscia, in the northern part of Lazio in central Italy.  In 1875 a group of Trappist nuns from Notre Dame de Vaise Abbey near Lyon, France set out to establish a new community in Italy. They first arrived at San Vito, near Turin then in 1898 temporarily relocated to Grottaferrata where the community of the Catacombs offered their retirement house to the young community. In 1954, the community purchased a property in Vitorchiano with the goal of permanently settling. The community permanently relocated in June of 1957 upon the completion of the new monastery. Since their arrival in 1957, the sisters have devoted themselves to reclaiming the land covered by “peperino”, a volcanic stone typical of the region.

There are currently over 70 sisters living in the monastery, the average age is 53 years old, with the youngest being 25 years old and the eldest being 93 years old. The Abbess of Vitorchiano is Sr.  Rosaria Spreafico.

The sisters of Vitorchiano support themselves through the work of their own hands. They make various handmade products such as wines, jams, olive oil, and through their publishing of religious literature, cards and calendars.

 

Winery History

In 1963 the sisters of Vitorchiano were able to plant their first vines. The vineyards include plantings of Trebbiano, Malvasia, Verdicchio, and Grechetto vines. All grapes are cultivated without the use of synthetic chemicals.

The wines of the Vitorchiano monastery are named Coenobium, which is Latin for convent or monastery.

Currently the vineyards cover about 3 hectares ( 7.4 acres ) of the property and the vines, with an average age of thirty years, are pruned manually.

The monastery has followed organic farming methods since 1993, with certification of the  – Suolo e Salute – Association. Periodic and thorough mowing of the grass contributes necessary organic compost.  Being natural wines without chemicals additives; these wines are very digestible. This allows the pleasure of being able to drink a little more than many other wines and have no side effects such as headache, heartburn, or red eyes.

Within the first ten days of October, the nuns themselves harvest the grapes.

The freshly picked grapes are brought to the winery and processed without adding leavening agents. Only native yeast is used.

COENOBIUM IGP LAZIO BIANCOcoenobium white bottle

This is a rare Lazio white wine with great character. It is a blend of three indigenous grape varietals: 45% Trebbiano, 35% Malvasia and 20% Verdicchio. The grapes are grown solely in the monastery vineyards by the Trappist sisters of Vitorchiano.  

Average annual production is approximately 17,000 bottles. Its intrigue comes from the volcanic soils that underlay the vineyards.

color: straw yellow in color.

nose: wild herbs, flowers, lemon citrus and hints of tropical fruit: pineapple, banana, peach and apricot with a subtle minerality.

palate: Subtle sweetness followed by pleasant and mild acidity. Ripe apples and pears, citrus, and mineral notes. This is a very approachable, easy-drinking, and overall enjoyable wine. Very smooth and pleasant.

recommended serving temperature: 12-15 degrees C

recommended food pairings: caprese salad, pasta carbonara, gnocchi alla romana, pasta with white sauce, grilled chicken dishes, seafood, clams, rabbit, snails.

 

Coenobium Ruscum bottleCOENOBIUM RUSCUM IGP LAZIO BIANCO

Ruscum is a blend of the same three autochthonous grape varietals: 45% Trebbiano, 35% Malvasia and 20% Verdicchio. But, in this instance, the juice is left to ferment on the skins for a period of 15 days, extracting all of the flavors, colors and textures of its fruit; this is similar to the vinification of red wine. The result is a wine of deep golden color and penetrating minerality with hints of herbs, such as anise, sage, oregano and wild flowers. Average annual production of this cuvée is only 4000 bottles.

Respecting the natural origin of the grapes, these wines do not undergo a forced stabilization process. Therefore, the alcohol percentage will differ from year to year.

color: dark gold with bronze hues.

nose: herbs (sage, oregano and mint to name a few). Wild flowers. Wood notes. Lovely ripe fruits: apple, pear, lime. Subtle mineral notes.

palate: the taste is an explosion of freshness and flavor, which compels us to taste it again and again. Pleasant acidity with subtle hints of tannins (from 15 days on lees). Flavors of grapefruit, orange peel, lemon zest, citrus and gentle honey. Very balanced. Juicy, smooth, approachable and easy drinking. Even more so as time goes by. Outstanding!

Recommended serving temperature: 14-15 degrees.

Recommended food pairings: Pollo San Bartolomeo in umido. fresh cheeses of all kinds, pizza rustica, pizza, quail, fish dishes, eggplant parmigiana
